I’m so excited!!
Baking cookies is one of our favourite Christmas traditions. I have always loved cooking and experimenting with new recipes and ingredients. Cooking for me is a way to escape and relieve stress. Now that I have kids, I try to get them involved as much as possible. It’s a great way to spend quality time together and there are so many benefits for children's development. Involving kids in cooking can help them in many ways: learning what is healthy and what is not, how to share tasks, to wait for their turn, to develop fine motor skills, to learn early concepts of math and science, just to name a few.
I have decided to share our family recipe below for delicious and easy Christmas cookies that are a hit every year at our house. I used the Christmas eco cutters set to make fun festive shapes for the kids.
Ingredients (for around 20 cookies)
For the cookies dough:
- 1 egg
- 125gr of raw sugar (I used a dark brown soft sugar to obtain the brownish colour in the cookies)
- 125gr unsalted butter
- 250gr flour
For the royal icing (optional)
- 1 egg white
- 100 to 150gr icing sugar
1. Preheat oven to 160 C
2. Place all the ingredients in a bowl and mix with your fingertips until the mixture begins to bind together. Knead into soft dough
3. Place the dough between 2 baking papers and gently roll the dough out to about 5mm thick. (Using baking sheets allows you to roll the dough without it sticking to the rolling pin and without having to add a lot of extra flour to the dough)
4. Chill in the fridge for 30 minutes. (This is for the dough to rest and to make it easier to cut)
5. Cut into shapes using your Christmas dough eco cutters. If you have extra dough, roll it out again and place it back in the refrigerator for about 10 minutes before making more shapes
6. Transfer the biscuits onto the baking tray on top of a sheet of baking paper
7. Bake for 15-20 minutes, keep an eye on them and remove them as soon as they turn gold
8. Transfer the biscuits to a wire rack to cool
9. While cookies are cooling down, you can prepare the icing mixture
10. Mix together the white egg with the icing sugar. Start with 100gr of icing sugar and add more until you get a thick and sticky mixture
11. Place this icing mixture into a pouch.
12. Once the cookies have cooled completely, you can start to decorate. I just simply followed the lines made by the cutters
13. Store in an air-tight container at room temperature, they can last about 10 days
Wait for the icing to dry and enjoy! They make a great homemade gift too, just put them in a mason jar or in a small box and wrap a ribbon around it.
